課程概述

本課程將引導學生了解現今健康風險評估領域的新興工具及資料庫。修課學生將選擇潛在食品毒物做研究主題,應用新興工具進行毒理資料系統性文獻回顧、針對欠缺毒理資料的物質進行交叉參照(read-across)或預測毒性(quantitative structural activity relationships, QSAR),並針對台灣族群進行該食品毒物累積性暴露評估。

This course will introduce the emerging tools and databases in the field of health risk assessment. Students will apply emerging tools to perform systematic literature reviews on potential food toxicants, use a read-across approach or QSAR models to predict the toxicity of emerging chemicals, and conduct an aggregate exposure assessment for the Taiwanese population.
 

課程目標
一、 學生將了解系統性文獻回顧的結構,並習得以HAWC 線上文獻整理工具進行文獻回顧
二、 學生將能使用適當的工具與資料庫以評估化學物質的毒性
三、 學生將能應用TTC方法來進行化學物質管理決策
四、 學生將能了解生物活性外插(IVIVE)的方法,並能應用到高通量生物活性資料上以取得生物活性起始劑量(point of departure values, PODs)
五、 學生將能利用劑量效應評估軟體,利用動物實驗數據自行計算出起始劑量(PODs)
六、 學生將能進行累積性暴露評估,以了解台灣族群的化學物質暴露情況
七、 學生將具蒐集、組織、及統整資料的能力以解決現實世界關於食品安全的相關議題
八、 學生將具有獨立思考及批判的能力

1. Students will understand the structure of a systematic literature review and be able to perform toxicological literature review using Health Assessment Workplace Collaborative (HAWC).
2. Students will be able to evaluate the toxicity of chemicals using proper tools and database (e.g., QSAR toolbox, CompTox Chemicals Dashboard, etc.).
3. Students will be able to use the threshold of toxicological concern concept to inform decision-making.
4. Student will be able to perform in vitro-to-in vivo extrapolation using high-throughput bioactivity data.
5. Student will be able to derive in vivo point of departure values from a dose-dependent dataset.
6. Student will be able to conduct aggregate exposure assessments of chemicals.
7. Students will be able to collect, organize and synthesize appropriate information necessary to make decisions and solve real-world problems in food safety.
8. Students will be able to critically evaluate research techniques and methodologies applicable to food safety.
 
課程要求
期中書面報告: 50%
修課學生將利用自課程內容習得的相關工具,針對其選擇的食品毒物做系統性毒理資料文獻回顧。文獻回顧內容應涵蓋食品毒物的健康效應,包括其來源、代謝、毒性資料、及作用機轉等。修課學生將系統性統整自體外實驗(機制相關)、動物實驗及流行病學蒐集之毒理代謝資料。期中書面報告形式不拘,以十頁為限。
期末口頭報告:50%
修課學生將延續上半學期選擇之主題,利用課程工具針對台灣族群進行食品毒物的累積暴露評估。口頭報告內容應涵蓋該食品毒物的來源、代謝毒性、以及台灣人對於該食品毒物的累積暴露現況。最後,學生可進行風險特徵化總結其健康風險 (非必須)。

Mid-Term Paper (50%)
Students will perform systematic literature review on contemporary issues of food toxicants. Students are anticipated to adept at applying the literature review tools and database for a comprehensive toxicological review. The term paper should cover the health implications of toxic chemicals (synthetic and natural), including their source, nature, occurrence, distribution, metabolism (i.e., toxicokinetics, ADME), toxicities, mechanisms of action, and perspective. Student are expected to organized evidence from in vitro mechanistic studies, animal studies, and epidemiological studies in a 10-page essay.
Final oral presentation (50%)
Student will perform aggregate exposure assessment of the selected food toxicant for Taiwanese population. The oral presentation should cover the source, metabolism, toxicity, and the aggregate exposure assessment of a food toxicant. Finally, students can also perform risk characterization to conclude the health risks present to Taiwanese population (not required).
